Crustacean aquaculture has a high added value: while it accounts for 6.3% of world production in terms of quantity, it corresponds to 20 % in terms of value. Twenty-six percent of the output from this type of aquaculture is from fresh water. This activity started in the 1980s and following slow development during 1990s, is now increasing by more than 8 % per year.

The ratio between fishery and aquacultural production varies across the world Greenland is a country with fisheries only; China, Indonesia and the USA have fisheries and aquaculture; Thailand and Brazil are largely aquacultural; and Ecuador almost exclusively aquacultural for shrimp production.
